From the kitchen: Gerzsi planned his first Thanksgiving by starting at 9 a.m. on Thursday. By noon the turkey was still frozen, the pie was still flour, and the oven had four things that all wanted 375°F at once. Chef Tamás took the pencil and turned the paper over. “We don’t plan forwards. We plan backwards, from the moment the plates go out.”

The short answer

  • A week before: start thawing a big frozen turkey (a 20 to 24 lb bird needs 5 to 6 days in the fridge, so by Thursday, Nov 19).
  • The weekend before: shop, check your thermometer in ice water, sharpen the carving knife.
  • Tuesday and Wednesday: everything that can be made ahead. Brine Wednesday night.
  • Thursday: work backwards from dinner. The turkey’s rest time is when the oven is free for the sides.

The one tool that keeps the plan honest: a leave-in probe thermometer. America’s Test Kitchen’s Best Buy is the ThermoPro TP16 ($25–50).

Why plan backwards?

A hotel kitchen doing a banquet for 200 doesn’t start with “what do I cook first.” It starts with “plates go out at 7:00,” then subtracts. Thanksgiving is the same job at home: one big roast, a fixed serving time, and one oven. Write the serving time at the bottom of the page and work up.

The day-by-day plan for November 26, 2026

WhenWhat to do
Thu, Nov 19Frozen 20 to 24 lb turkey goes into the fridge to thaw (5 to 6 days).
Fri, Nov 20Frozen 16 to 20 lb turkey goes into the fridge (4 to 5 days).
Sat, Nov 21Frozen 12 to 16 lb turkey goes into the fridge (3 to 4 days). Big shop: everything that keeps.
Sun, Nov 22Frozen 4 to 12 lb turkey goes in (1 to 3 days). Test the thermometer in ice water (it should read 32°F). Sharpen the carving knife. Count plates, chairs and pans.
Mon, Nov 23Write the Thursday oven schedule (below). Make pie dough and freeze or chill it.
Tue, Nov 24Cranberry sauce. Chop onions, celery and carrots for stuffing and stock, store them covered. Fresh shop: herbs, cream.
Wed, Nov 25Bake pies. Assemble make-ahead sides. Mix the 5% brine and get the turkey in it in the evening (8 to 12 hours in the fridge). Set the table tonight, not tomorrow.
Thu, Nov 26Follow the oven schedule. The turkey is done at 165°F, not at a time.
Thaw times: USDA, about 24 hours in the fridge for every 4 to 5 lb. Brining time: The Splendid Table’s overnight method. The rest of the plan is ours.

Thursday, worked backwards: an example

Say dinner is at 4:00 pm and the turkey is 14 lb, unstuffed. The USDA chart gives 3 to 3¾ hours at 325°F. Plan for the long end; it’s easier to hold a finished bird than to rush a raw one.

TimeJob
4:00 pmPlates out.
3:40 pmCarve. Gravy on the stove (reheat to a rolling boil).
3:15 pmTurkey out, resting under loose foil. The oven is now free: sides and rolls go in.
2:30 pmFirst thermometer check (3 hours in). Leave-in probe in the thigh; confirm the breast and wing with an instant-read.
11:30 amTurkey in the 325°F oven. Neck and giblets (not the liver) go in a pot of cold water for gravy stock.
11:00 amOven on to 325°F. Brined bird rinsed and patted dry.
MorningCoffee. Nothing else should be left to chop.
Example only. Change the numbers for your bird with the turkey cooking time chart. A stuffed bird takes longer, and the stuffing must reach 165°F too.

🦫 gerzsi.com hack: the rest is your second oven. Everybody thinks one oven is the problem. It isn’t. The turkey needs to rest before carving anyway, and those 20 to 40 minutes are free oven time. Plan your sides for that window and the “one oven” fight is over.

The tools the plan depends on

Thanksgiving timeline FAQ

When should I take the turkey out of the freezer?

Count about one day in the fridge for every 4 to 5 lb. For November 26 that means Thursday the 19th for a 20 to 24 lb bird and Saturday the 21st for a 12 to 16 lb one.

What can I make ahead?

Pie dough, pies, cranberry sauce and chopped vegetables keep well for a day or two in the fridge. The turkey itself is the one thing that has to be cooked on the day.

What if the turkey is done early?

Good. Rest it under loose foil and use the extra oven time for the sides. A rested bird carves better than a rushed one.

How long are leftovers safe?

The USDA says refrigerate within two hours and eat within three to four days. More in our leftover turkey guide.

Write the serving time at the bottom. Then work up.
