Season 1 · Stop 7 of 10 · The Bakery at the Bend · Apprentice level: Line Cook · New friend: Hazel the squirrel

Painted illustration of Gerzsi the beaver peering at a dial thermometer inside an oven

Hazel the squirrel runs the little bakery at the bend in the river. She bakes the best walnut cookies anywhere, and she had a cold, so she asked if I could cover one morning shift. “Easy recipe,” she sniffled. “Three-fifty, twelve minutes.”

I followed it exactly. 350°F. Twelve minutes. Out came twelve small charcoal briquettes.

I blamed the recipe. Then the flour. Then the tray. Then, in a dark moment, myself. Pippa suggested we glue them together and sell them as a cookie raft. Hazel, from under her blanket, just groaned.

Chef Tamás arrived with the morning bread order, looked at the tray, and didn’t say a word. He hung a cheap little dial thermometer on the oven rack, closed the door and waited ten minutes.

It read 400°F.

“The dial on an oven is a suggestion,” he said. “Not a promise.” Hazel’s oven had been running fifty degrees hot for two years. She had simply learned, without knowing it, to take everything out early.

The second batch was golden and soft in the middle. Hazel says I can cover a shift again any time. She also says I’m not allowed to set the timer.
