Hazel’s story

Hazel bakes the best walnut cookies on the river at the Bakery at the Bend. She will let Gerzsi cover a shift. She will not let him set the timer.

  • Weighs everything. Measures nothing.
  • Hides walnuts in her apron for emergencies.
  • Has forgiven the briquettes. Has framed one.

Hazel runs the little bakery at the bend in the river. Every morning at five, the smell of walnut cookies drifts over the water, and every boat slows down.

For two years her oven ran fifty degrees hot, and she never knew. She had simply learned, without noticing, to take everything out early.

Then she caught a cold, Gerzsi covered a shift, followed her recipe exactly, and produced twelve small charcoal briquettes.

Chef Tamás hung a cheap dial thermometer in the oven. It read 400°F. Hazel laughed so hard she sneezed flour over the whole counter.

Now there is a thermometer in her oven and a sign above it: “The dial is a suggestion.” Gerzsi is welcome any time. The timer is still hers.

Hazel is made up, like everyone on the river except Chef Tamás. The gear is real.
